After the fish is graded, it is meticulously cut and prepped in order to be delivered to the restaurants. In this case, a 6 pound block is skillfully cut.

Then we take samples and grade them. The grades are 1+, 1, 2+ and 2. Each grade is priced differently, the 1+ being most expensive. This grade of tuna is used for raw dishes, such as sushi, tartar and ceviche. It is truly exquisite in its taste and color.
