Squid in all its fresh glory will end up on a plate at Bar Corvo. From fish to dish!
The blocks of fish then make their way to the finest chefs in the country who lovingly and carefully prepare amazing dishes. FROM FISH TO DISH!
After the fish is graded, it is meticulously cut and prepped in order to be delivered to the restaurants. In this case, a 6 pound block is skillfully cut.
Then we take samples and grade them. The grades are 1+, 1, 2+ and 2. Each grade is priced differently, the 1+ being most expensive. This grade of tuna is used for raw dishes, such as sushi, tartar and ceviche. It is truly exquisite in its taste and color.
